Tho Dairymen’s Association of' Ontario last year held its tenth annual convention at Belleville, and at the last session of the Ontario Legislature an Act was passed dividing the Association, to be designated the Dairyhon’s Association of Western Ontario, and 'the Dairymen’a Association, and this convention, although the eleventh annual gatheriog of dairy men is in reality the first meeting of the Western Associa tion. Tho mooting was one of the deepest in terest throughout. The sessions were well attended, and the greatest animation was exhibited in the discussions. The coagnlum which adhered to or enclosed the rennet in sortie way formed a new fat which did not exist before. Tho cheese was powerfully affected by it, and derived its peculiar flavor from it.How thia fat was formed was not known.
