The latter therefore is in tho greatest danger. The milk pro­ ducer is tho one who will solve this spestiou of rise or fall. It is out of the manufactur­ er's hands. Ho is but tho instrument of the dairy men, whoso greed and shortsigbt- nos# has caused the markets to be flooded with ski turned and half skimmed cheese, and improperly manufactured tall creams. First, through a deeiro to get more than tho value of his milk ; second, by refusing to pay tho worth of skilled labor ar d tbo use of unfit ingredients; third, by the sup­ ply of impure or damaged milk. Aud ho will suffer the consequence of eoutinuiug all or either of these practices. In point­ ing to tho cause of danger I have indicated lUe course that must bo adapted for their avoidance, but I will be specific. First. Greater attention musx be given to the pro- ductiou of pure, rich milk. To this end proper kinds of cows, proper feed for thom and their proper care are necessary. The milk must then bo properly taken care of to keep it sweet and pure until it reaches the factory or creamery. Then tho intelli- gonco and enterprise that has produced the propsr kind of milk will have provided a suitable place for its manufacture and a skilled workman to convert it into cheese , or butter.
